  • 2-3 large Russet Potatoes
  • 1/4 cup olive oil
  • 1/2 packet Ranch seasoning
  • 1-2 tsp black pepper
  • 1 cup mozzarella cheese
  • 1 cup 4 cheese Mexican or Italian blend
  • 5-6 slices of bacon (can use bacon bits)

Preheat the oven to 350 and slice the potatoes to about 1/2 inch thickness.

Brush the potatoes with olive oil and sprinkle on the ranch seasoning and black pepper. Flip over each potato, brush with olive oil, and sprinkle with ranch and black pepper.

Cook the bacon and allow it to drain and cool. If using bacon bits, skip this step.
