As we mentioned, these chicken salad cucumber boats are super easy to make. You can use this homemade chicken salad recipe if you would like or a premade chicken salad that is keto-friendly.
Ingredients Needed:
- 4 pickling cucumbers
- 1 can of keto friendly canned chicken breast (drained well)
- ⅓ c mayonnaise
- ¼ c chopped celery
- 1 tsp lemon juice
- 2 tbsp chopped green onions
- ½ tsp garlic powder
- salt and pepper to taste
- chopped parsley for garnish
How to make the Chicken Salad Cucumber Boats:
- Slice each of the cucumbers in half lengthwise, and use a spoon to deseed and scoop out each of the centers.
- In a mixing bowl, combine the chicken, mayonnaise, celery, lemon juice, chopped green onions, garlic powder, salt, and pepper. Stir to combine well. You can add more salt & pepper to your liking.
- Fill each half of the cucumbers with the chicken salad mixture.
- Garnish with the chopped parsley.
