Ingredients Needed:
- 4 pickling cucumbers
- 1 can of keto-friendly canned chicken breast (drained well)
- ⅓ c mayonnaise
- ¼ c chopped celery
- 1 tsp lemon juice
- 2 tbsp chopped green onions
- ½ tsp garlic powder
- salt and pepper to taste
- chopped parsley for garnish
How to make the Chicken Salad Cucumber Boats:
Slice each of the cucumbers in half lengthwise. Use a spoon to deseed and scoop out each of the centers.
In a mixing bowl, combine the chicken, mayonnaise, celery, lemon juice, and chopped green onions. Add in the garlic powder, salt, and pepper. Stir to combine well. You can add more salt & pepper to your liking.
Fill each half of the cucumbers with the chicken salad mixture. Garnish with chopped parsley.
