As we mentioned, these chicken salad cucumber boats are super easy to make. You can use this homemade chicken salad recipe if you would like or a premade chicken salad that is keto-friendly.

Ingredients Needed:

  • 4 pickling cucumbers
  • 1 can of keto friendly canned chicken breast (drained well)
  • ⅓ c mayonnaise
  • ¼ c chopped celery
  • 1 tsp lemon juice
  • 2 tbsp chopped green onions
  • ½ tsp garlic powder
  • salt and pepper to taste
  • chopped parsley for garnish

How to make the Chicken Salad Cucumber Boats:

  1. Slice each of the cucumbers in half lengthwise, and use a spoon to deseed and scoop out each of the centers.
  2. In a mixing bowl, combine the chicken, mayonnaise, celery, lemon juice, chopped green onions, garlic powder, salt, and pepper. Stir to combine well. You can add more salt & pepper to your liking.
  3. Fill each half of the cucumbers with the chicken salad mixture.
  4. Garnish with the chopped parsley.
