BLT Pasta Salad with Mayonnaise
Finely chopped bacon and romaine lettuce are mixed with elbow macaroni, mayo, sugar, and white vinegar. Top it off with some cherry tomatoes and you have a tasty summer pasta dish.

Ingredients:
- 16 ounces elbow macaroni, prepared
- 6 strips cooked bacon, finely chopped
- 1 head romaine lettuce, finely chopped
- 20 cherry tomatoes, halved
- 1 cup mayonnaise (or a homemade vegan mayonnaise)
- 1/4 cup sugar
- 1/4 cup white vinegar
- 1 teaspoon salt
- 1 teaspoon black pepper
Instructions:
- Combine the cooked macaroni, bacon, lettuce, and tomatoes in a large bowl and stir.
- In a small bowl, whisk together the mayonnaise, sugar, vinegar, salt and pepper until the mixture is smooth.
- Pour the mayo dressing over the top of the salad ingredients and stir until the noodle mixture is well coated.
- Cover the bowl and chill for at least 4 hours.
- When you are ready to serve, stir the BLT pasta salad and plate.
