Easy BLT Pasta Salad

Finely chopped bacon and romaine lettuce are mixed with elbow macaroni, mayo, sugar, and white vinegar. Top it off with some cherry tomatoes and you have a tasty summer pasta dish.

Ingredients
  

  • 16 oz elbow macaroni, prepared
  • 6 strips cooked bacon, finely chopped
  • 1 head romaine lettuce, finely chopped
  • 20 cherry tomatoes, halved
  • ¼ c sugar
  • 1 c mayonnaise
  • ¼ c white vinegar
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions
 

  • Combine the cooked macaroni, bacon, lettuce, and tomatoes in a large bowl and stir.
  • In a small bowl, whisk together the mayonnaise, sugar, vinegar, salt and pepper until the mixture is smooth.
  • Pour the mayo dressing over the top of the salad ingredients and stir until the noodle mixture is well coated.
  • Cover the bowl and chill for at least 4 hours.
  • When you are ready to serve, stir the BLT pasta salad and plate.
