Cajun Roasted Carrots
These easy Cajun roasted carrots make the perfect side dish. Baby carrots are roasted with a sweet and spicy mixture and cooked until perfectly tender.
Serve up these spicy carrots as a side, for potlucks, or we even like to enjoy them as a snack. You can even throw these into a spicy stir fry recipe.

Making these easy Cajun roasted carrots is super simple. You only need a few ingredients and some time in the oven.
One of our favorite roasted carrot recipes is from Spend with Pennies. They were a hit with the family. For those days when we want a little kick to our dish, we make these cajun roasted carrots.
Recipe Ingredients:
Carrots: For this Cajun roasted carrots recipe we use a pound of baby carrots.
Olive Oil: Just a few tablespoons (2) of olive oil for roasting.
Brown Sugar: The brown sugar will add some extra sweetness to the carrots and complement the Cajun seasoning.
Cajun Seasoning: 1 tablespoon of Cajun seasoning is all you need. However, if you want your Cajun roasted carrots to have a little more or less heat, you can adjust the amount of seasoning you put in.
Salt and Pepper: to taste of course.
This recipe makes about 5 servings. Prep time is only 5 minutes and the total cook time is about 25 minutes.

How To Make Easy Cajun Roasted Carrots
- 1 pound baby carrots
- 2 tablespoons olive oil
- 2 tablespoons brown sugar
- 1 tablespoon Cajun seasoning
- Salt and pepper
- Roast the carrots. Start by preheating the oven to 425 degrees. Then, line a baking sheet with parchment paper.
- Mix the seasoning. In a small bowl, mix together the oil, brown sugar, Cajun seasoning, salt and pepper.
- Coat the carrots. Toss the baby carrots into the mixture making sure they are well coated.
- Spread the carrots in an even layer on the lined baking sheet. This will allow them to roast evenly.
- Bake for 20 to 25 minutes, until fork tender, stirring the carrots halfway through the cooking time.
Serve up these easy roasted carrots with cajun seasoning and you have a delicious side dish. We love bringing them to potlucks or family gatherings because they are always a hit.
