These easy Cajun roasted carrots make the perfect side dish. Baby carrots are roasted with a sweet and spicy mixture and cooked until perfectly tender.

Making these easy Cajun roasted carrots is super simple. You only need a few ingredients and some time in the oven.

One of our favorite roasted carrot recipes is from Spend with Pennies. They were a hit with the family. For those days when we want a little kick to our dish, we make these cajun roasted carrots.

Recipe Ingredients:

Carrots: For this Cajun roasted carrots recipe we use a pound of baby carrots.

Olive Oil: Just a few tablespoons (2) of olive oil for roasting.

Brown Sugar: The brown sugar will add some extra sweetness to the carrots and complement the Cajun seasoning.

Cajun Seasoning: 1 tablespoon of Cajun seasoning is all you need. However, if you want your Cajun roasted carrots to have a little more or less heat, you can adjust the amount of seasoning you put in.

Salt and Pepper: to taste of course.

This recipe makes about 5 servings. Prep time is only 5 minutes and the total cook time is about 25 minutes.

How To Make Easy Cajun Roasted Carrots

  • 1 pound baby carrots
  • 2 tablespoons olive oil
  • 2 tablespoons brown sugar
  • 1 tablespoon Cajun seasoning
  • Salt and pepper
  1. Roast the carrots. Start by preheating the oven to 425 degrees. Then, line a baking sheet with parchment paper.
  2. Mix the seasoning. In a small bowl, mix together the oil, brown sugar, Cajun seasoning, salt and pepper.
  3. Coat the carrots. Toss the baby carrots into the mixture making sure they are well coated.
  4. Spread the carrots in an even layer on the lined baking sheet. This will allow them to roast evenly.
  5. Bake for 20 to 25 minutes, until fork tender, stirring the carrots halfway through the cooking time.

Serve up these easy roasted carrots with cajun seasoning and you have a delicious side dish. We love bringing them to potlucks or family gatherings because they are always a hit.
