Broccoli Salad Cold an Easy Recipe for Summer

We have always enjoyed broccoli salad. It’s a staple at many of our family gatherings, especially during the summer months. At any of our gatherings, you will always find broccoli salad and egg salad.
I had never tried a broccoli salad cold with eggs though. When I did, I realized my old summer broccoli salad recipe was missing something. After trying this recipe, I realized it was missing eggs.
I mean, doesn’t that look delicious!
You can see the bits of cheese, the bacon crumbles, and slivers of egg in that just brings the broccoli salad to life.
In our house, bacon can go with just about anything! It just adds that extra bit of flavor to your dishes, especially salads and bacon appetizers.
It’s amazing! It’s full of flavor, easy to make, and will be a hit at any summer gathering.

How to Make Broccoli Salad Cold
This is a really easy recipe to make. It only takes about 10 minutes to put together and then you just let it chill.
You can make it ahead of time, so that when you are ready you can just pull it out and spoon some onto a plate.

- Prep time: 10 minutes
- Chill time: about 1 hour
Ingredients:
- 1 cup mayonnaise
- ¼ cup sugar
- 1 tablespoon white vinegar
- 2 broccoli heads, chopped
- 1 cup chopped red onion
- 1 cup shredded cheddar cheese
- ½ cup sunflower kernels
- 5 strips bacon, cooked and chopped (can use 1/4 cup or so of real bacon bits)
- 3 hard boiled eggs, chopped
*You can use real bacon bits, but we prefer cooked bacon because it adds more flavor.
Instructions:
- Prepare the dressing by whisking together the mayo, sugar, and vinegar until well combined. Set it aside for later.
- In a large bowl, stir together the broccoli, chopped red onion, cheddar cheese, sunflower kernels, bacon, and chopped eggs.
- Pour the dressing over the broccoli mixture and stir until all the broccoli mixture is coated.
- Cover the bowl and refrigerate for at least one hour before serving.
