We love having some type of French toast for breakfast. One of our favorites is Cap’n Crunch French Toast but we’re up for just about any flavor.
Plus, French toast is a delicious breakfast for dinner idea and it’s so easy to make. As another added benefit, this casserole makes it even easier because it’s a one-dish breakfast meal. You can put it together the night before and bake in the morning when you’re ready.

Brioche French Toast Casserole with Chocolate Chips
This easy chocolate chip French toast casserole recipe makes 8 servings. It’s made with Brioche bread for a unique taste and chocolate chips for sweetness.
We do let it chill in the fridge overnight so you can make it the night before and then bake it in the morning for an easy breakfast.
It uses a premade chocolate chip brioche bread making it an easy recipe that you can put together in just 5 minutes.
Chocolate Chip Brioche French Toast Casserole

Easy French Toast Casserole with Brioche
- Makes 8 servings
- Prep time: 5 minutes
- Chill time: 8 hours
- Cook time: 45 minutes
- 1 loaf chocolate chip brioche bread (this one came from Aldi)
- 1 cup heavy cream
- 2 cups milk
- 5 eggs
- 1 teaspoon vanilla extract
- ¼ cup sugar
- 1 cup chocolate chips
How to Make Brioche French Toast Casserole
Cut the chocolate chip bread into small pieces and spread the pieces in a greased 9×13 baking dish. If you don’t want to cut it, you can just tear the bread apart and spread it around the dish.
In a medium bowl, whisk together the cream, milk, eggs, vanilla, and sugar.
Pour the egg and cream mixture over the top of the bread, then press the bread pieces into the sauce.

Top with chocolate chips. Cover the dish and refrigerate for at least 8 hours (up to overnight).
When you are ready to bake the casserole, just remove the casserole from the refrigerator and allow it to rest at room temperature for 30 minutes.
After it has rested, preheat the oven to 375 degrees.
Bake the casserole for 45 minutes or until the custard is set and no longer jiggles when you wiggle the dish.
