Ingredients Needed:
Pre-made Carrot Cake Mix: Any boxed brand carrot cake will work, so choose your favorite. You will make the carrot cake per the instructions on the box so you will want to make sure you have the eggs and other ingredients on hand.
Cream Cheese Frosting: Premade cream cheese frosting off the shelf. You can make your own if you want, but store bought icing works well and is used for this recipe.
Shredded Zucchini: After shredding your zucchini, you will want to squeeze out the juices so there are no extra liquids in the bars.
Cookie Frosting: Green and orange cookie frosting is used to make the carrot design on top. We like cookie frosting because it’s easy to apply.

Zucchini Carrot Cake Bars Recipe
- 1 box carrot cake mix + additional ingredients per instructions
- 1 cup of zucchini, shredded and squeezed
- Cream cheese frosting in a piping bag with cut tip
- Orange cookie frosting
- Green cookie frosting
How to Make the Zucchini Carrot Cake Bars from Cake Mix
Preheat the oven to 350 degrees.
In a large bowl, prepare cake batter per box instructions. Then, fold in shredded zucchini until the cake batter and zucchini shreds are fully mixed.
Line a 13×9 sheet pan with parchment paper. Pour the batter into the pan and bake for about 15 minutes or until a toothpick comes out clean.
Let the carrot cake cool completely. This is an important step because you don’t want the icing to melt when you put it on the cake.
Once the carrot cake has cooled, slice it into 8-10 bars.
Pipe a border of frosting around each bar then pipe frosting in the middle and smooth out
