Ingredients:
- 1 c of flour
- ¾ cup of sugar
- 2 room temperature eggs
- ½ c of melted butter
- 1 teaspoon of baking powder
- 2 teaspoons of fresh lemon juice
- 1 teaspoon of lemon extract
Directions:
Preheat the oven to 350 degrees. While that is preheating, line an 8×8 baking dish with parchment paper and lightly butter it.
In a mixing bowl, combine the sugar, lemon juice, and melted butter. Mix until smooth.
Then, add the eggs and mix them in. You will want to be sure they are thoroughly mixed in.
Next, add the flour and baking powder. Mix for about a minute. Then, add the lemon extract and mix it in.
Pour the lemon blondie batter into the 8×8 pan and smooth it out with a spatula to make it even.
Bake the lemon blondie batter for 25 minutes, or until a toothpick inserted in the center comes out clean.
Dust with powdered sugar when cool. Cut into 3” squares and serve!
