Baked Taco Stuffed Meatballs with Ground Beef or Turkey
These easy baked taco stuffed meatballs will certainly allow you to mix up your typical dinner routine. Full of flavor and easy to make, these taco stuffed meatballs are delicious.
What I love about these homemade baked taco meatballs is that when you take a bite, you get a cheesy surprise. They are filled with cheese so that you have a gooey, cheesy, and filling side dish, main dish, or you can even serve them as an appetizer!

These baked taco meatballs stuffed with cheese can be used as a main dish. Just serve with Mexican rice and you will have a filling dinner. Of course, if you want to use them as an appetizer or side dish, they’ll work for that too!

There was a time when we would simply purchase a bag of store bought meatballs. It was quick and easy to throw in the oven when we felt like having them for dinner or serving them as an appetizer.
However, when prices started to rise and we were paying almost $6 for a small bag of meatballs, we started making our own. We always had ground beef on hand anyway and meatballs worked well when we would do a pantry challenge. Now, we like to experiment with different flavors and serve them with a variety of dishes on their own.
Baked Taco Stuffed Meatballs To Change Up Dinner
If you want to change up dinner or put a new spin on Taco Tuesday, you’re going to want to try these baked taco stuffed meatballs.
So, if you have stocked your pantry with taco seasoning, we highly recommend trying these!

Ingredients Needed for These Easy Taco Meatballs:
- 1 lb ground meat (you can use beef or turkey)
- ¼ cup breadcrumbs (plain)
- 1 egg
- ¼ cup milk
- 1 package taco seasoning (either store bought or homemade)
- Colby jack cheese cubes, 1 for each meatball
- Chopped cilantro for garnish
How to Make Baked Taco Stuffed Meatballs
Preheat the oven to 400 degrees and line a baking sheet with parchment paper.
Any type of baking sheet will work, we prefer these. The parchment paper is going to help catch the grease and make the baking sheet easier to clean afterward.
In a large bow, mix the ground meat, breadcrumbs, egg, milk, and taco seasoning until all of the ingredients are well combined.
Once everything is mixed together, scoop out about 4 tablespoons or an ice cream scoop full of the meat mixture to start making a meatball.

Then, slightly press down on it to flatten the meatball and place a cheese cube in the middle. Bring the sides up around to close the meatball completely sealed.

You want to make sure it’s sealed completely around the cheese so that the cheese doesn’t melt and run out onto the pan while it’s cooking.
Place the taco stuffed meatballs with cheese filling on a baking sheet and bake for about 30 minutes or until done.
To garnish, you can sprinkle with chopped cilantro after they have been baked. We do this, as you can see in the image above. This is optional but gives the taco stuffed meatballs a little color.
You can either make these baked taco stuffed meatballs and enjoy them as a main dish or serve them with Mexican rice to make a filling dinner.
Sometimes we do like to change up our appetizer choices and make these instead of the normal baked potato slices or cheesesteak empanadas.
They’re just something different to bring to the table and when guests bite into the meatballs, they get a little cheesy surprise.
