Easy Baked Taco Stuffed Meatballs
Use ground beef or turkey to make these easy baked taco stuffed meatballs and serve them for dinner or enjoy them as an appetizer.

- 1 lb ground meat (you can use beef or turkey)
- 1/4 c breadcrumbs (plain)
- 1 egg
- 1/4 c milk
- 1 pkg package taco seasoning (either store bought or homemade)
- Colby jack cheese cubes, 1 for each meatball
- Chopped cilantro for garnish (optional)
Preheat the oven to 400 degrees and line a rimmed baking sheet with parchment paper.
Mix the ground meat, breadcrumbs, egg, milk, and taco seasoning in a bowl until well combined.
Once combined, scoop out about 4 tablespoons or an ice cream scoop on the meat mixture to start making a meatball.
Then, slightly press down on it to flatten the meatball and place a cheese cube in the middle. Bring the sides up around to close the meatball completely sealed.
You want to make sure it’s sealed so that the cheese doesn’t melt and run out onto the pan while it’s cooking.
Place the taco stuffed meatballs with cheese filling on a baking sheet and bake for about 30 minutes or until done.
Sprinkle with chopped cilantro for garnish.
