Just imagine it.. sitting by the pool, soaking in some sun, and sipping on a cold frosty slushie with tropical flavors. Doesn’t that sound amazing!

Coconut Strawberry Pineapple Rum Slushie
This strawberry pineapple rum slushie only takes a few minutes to whip up and a few ingredients. Here is an overview of the ingredients to make the strawberry pineapple cocktail slushie.
Pineapple Chunks: Canned pineapple chunks are perfect.
Strawberries: We use fresh strawberries, but I suppose you can use frozen strawberries that have been thawed.
Ice: This will create the slushie texture.
Shredded Coconut: For some extra flavor and to make a beautiful topping for the pineapple rum slushie.
Rum: To give it that tropical flavor and to create a cocktail.
Notes:
- This recipe makes 2 drinks but you can double, triple, or adjust the ingredients to make however many coconut strawberry pineapple slushies you’d like.
- Prep time: about 20 minutes
- These slushies are made using a blender so that you can properly crush the ice and give it that slushie consistency.
- Serve in hurricane glasses to get the look above.
Ingredients Needed for the Strawberry Pineapple Rum Slushie:
- 1 can of pineapple chunks
- 10 fresh strawberries; tops removed
- 2 cups ice
- 1 cup shredded coconut
- 2 oz. rum
How to Make the Coconut Strawberry Pineapple Rum Slushie:
Place strawberries, half the can of pineapple juice, and one cup ice into the blender. Blend well and pour into another measuring cup. Set aside.
Place pineapple into the blender and add the remaining pineapple juice. Add in two ounces of rum. Add in one cup ice and blend well.
In a tall glass add a layer of the strawberry mixture, then a layer of shredded coconut, and top it off with a layer of pineapple mixture.
Repeat and top off with one strawberry and some of the shredded coconut.
