Slice the onion in half, then dice one half of the onion. The other half, we are going to slice and save for the topping.
Slice the poblano pepper. While we slice the pepper, if you prefer to chop it you can.
Heat a skillet over medium heat and add a tablespoon of olive oil.
Add the ground pork and salt and pepper to taste, to the skillet. As the pork browns, break the meat into small chunks to make the taco meat.
When the pork is cooked thoroughly, and shows no pink spots, push the pork to one side of the skillet. Add the diced onion and poblano peppers.
Allow the peppers and onions to cook down for about 3 minutes.
Once the onion and peppers have cooked down, add chicken broth and tomato paste to the skillet.
Stir everything together and add the taco seasoning to the meat and allow it to cook for 5 minutes.
Serve the ground pork taco meat in tortillas and top with the sliced onions we set aside, tomatoes, cheese, and any other favorite toppings.
