Ground Pork Tacos

An easy weeknight meal, these ground pork tacos only take a few minutes to make and are flavorful.

Ingredients
  

  • 1 poblano pepper
  • 1 onion
  • 1 lb ground pork
  • 1 tomato
  • envelope of taco seasoning
  • ½ c chicken broth
  • 2 tablespoon tomato paste
  • 1 tablespoon olive oil
  • ½ c cheese of choice
  • Flour or corn tortillas
  • Salt and Pepper to taste

Instructions
 

  • Slice the onion in half, then dice one half of the onion. The other half, we are going to slice and save for the topping.
  • Slice the poblano pepper. While we slice the pepper, if you prefer to chop it you can.
  • Heat a skillet over medium heat and add a tablespoon of olive oil.
  • Add the ground pork  and salt and pepper to taste, to the skillet. As the pork browns, break the meat into small chunks to make the taco meat.
  • When the pork is cooked thoroughly, and shows no pink spots, push the pork to one side of the skillet. Add the diced onion and poblano peppers.
  • Allow the peppers and onions to cook down for about 3 minutes.
  • Once the onion and peppers have cooked down, add chicken broth and tomato paste to the skillet.
  • Stir everything together and add the taco seasoning to the meat and allow it to cook for 5 minutes.
  • Serve the ground pork taco meat in tortillas and top with the sliced onions we set aside, tomatoes, cheese, and any other favorite toppings.
