Preheat the oven to 375 degrees and place a sheet of parchment paper on the baking sheet. This will help keep our baking sheet clean so we don’t have a mess to clean up.
Lay one sheet of phyllo dough at a time on the baking sheet. Brush a layer of melted butter between each sheet pressing layers together.
Brush the very top layer with whisked egg white and sprinkle on the paprika and salt & pepper.
Top the crackers off with a sprinkle of everything bagel seasoning.
Add a thin layer of the finely shredded mozzarella cheese.
Cut into squares so that you get crackers.
Bake for 8-10 minutes or until they are golden brown and crispy. Cool and serve.
