- 1 can pineapple chunks
- 10 fresh strawberries; tops removed
- 2 c ice
- 1 c shredded coconut
- 2 oz rum
Place strawberries, half the can of pineapple juice, and one cup ice into the blender. Blend well and pour into another measuring cup. Set aside.
Place pineapple into the blender and the remaining juice. Add in two ounces of rum and ice. Blend well.
In a tall glass layer in strawberry, a layer of shredded coconut, and then a layer of pineapple. Repeat and top off with one strawberry and some coconut.
