Preheat oven to 350 degrees.
In a large bowl, beat the egg, softened butter and the cake mix together until well mixed.
Once the batter is mixed, roll into half inch balls and place on a parchment paper lined cookie sheet.
Bake the cookies for 8 minutes. Remove and place on cooling rack.
While the cookies are cooling, take half of the icing and mix it with the yellow food coloring. Then, take the last half and mix it with the pink food coloring.
If you’re making them for another occasion, simple use the colors you prefer. To use 3 different colors, mix the icing into 3 equal parts and add the food coloring to each.
Once the cookies are cooled, place icing on the bottom of one cookie then add another cookie for the top. This should create a sandwich cookie like in the image above.
